Matthew's Block Cabernet Sauvignon - Tasting
Notes
Strong cassis aromas mixed with cedar and
allspice. Gives a very warm and inviting impression (like an
alpine log cabin in winter). The wine enters the mouth
warmly. The tannins are focused at first at the front of the
palate, then spread elegantly across the rest of the palate.
This wine is classically structured with firm but not
overwhelming tannins, and enough acidity to allow it to pair
perfectly with a host of foods (cedar planked salmon, lamb with
rosemary, east-Indian inspired meat dishes to name a
few).
It should age beautifully for a decade or more.
