Matthew's Block Cabernet Sauvignon - Tasting Notes
Concentrated aromatics of black cherry, plum, dark
chocolate, roast coffee and smoke segue to lush mouth-coating
flavors of ripe berries, red curreant, anise, vanilla, nutmeg and
cedar. This wine gives a very warm and inviting impression
(like an alpine log cabin in winter).
The tannins are focused at first on the front of
the palate, then spread elegantly across the rest
of one's mouth.
This wine is classically structured with firm
but not overwhelming tannins, and enough acidity to allow it to pair
perfectly with a host of foods (cedar-planked salmon, lamb with
rosemary, east-Indian inspired meat dishes to name a few).
It should age
beautifully for a decade or more.
